YAM PORRIDGE/ POTTAGE RECIPE
Porridge/ Pottage is one of the most cherished Nigerian delicacies that most Nigerians love so much and has an amazing taste. Porridge/ pottage recipe is delicious especially when ingredients are rightly and carefully selected for a rich and better taste.
It can be prepared simply by combining yam, some carefully selected ingredients and tomato sauce. As mentioned earlier, porridge or pottage remains one of the delicacies that Nigerians enjoy so much.

INGREDIENTS
1 Tuber of White Yam
2 Big Onions
3 Big -size Tomatoes
3 Red Bell pepper
3 Scotch Bonnet
1/2 tsp of each Curry & Thyme
1 Big Smoked fish
1 Medium – size smoked Turkey
2 Tsp of ground crayfish
1 medium-size Onions (dice)
1/2 cup of Palm oil
4 Seasoning cubes
Salt to taste
Some ginger and garlic
Scent Leaves (Optional)
INSTRUCTIONS
Peel it and cut into sizable pieces, wash them, and leave them in warm water and set them aside.
On medium heat, heat up a non-stick pan or Dutch oven with palm oil and add the diced onions and the ground Cray Fish and allow them to sauté about 2 minutes.
Add the blended tomatoes, onions, Red bell pepper, scotch bonnet, ginger, garlic and to cook for about 5- 6 minutes, then open and add your seasoning cubes, curry & thyme and salt to taste.
Then add the meat and fish of your choice, mine are smoked turkey and smoked Mackerel. At this time, cover again for 2-3 minutes for all ingredients to simmer.
Now add the white yam that has been cut into sizable pieces, add water to the level of the yam or as the desired thickness, then cook until the yam is tender enough and the soup thickens to your desire.
Finally add the scent leaves or your desired leafy green. cover and allow to simmer again for about 5 minutes.
Serve and enjoy your delicious yam porridge.
