GBEGIRI (ABULA) SOUP
This is a type of Nigerian beans soup, It is made from pealed cooked. Blacked eyed pees or honey brown beans is definitely perfect for this recipe. It is best enjoyed with ewedu and buka stew.
Amala or Tuwo (Corn flour) If you are thinking of an easy food to prepare, gbegiri is definitely one of it. It is delicious and its savoring taste cannot be explained, you definitely have to try it.
INREDIENTS:
3 cups of brown honey beans or black eyed peas (beans flour)
1k assorted meat
4tbsp palm oil
3tbsp crayfish (grinded)
3tbsp dried grinded pepper
2 seasoning cubes
1-2 tbsp Locust beans
Salt for taste
PREPARATION:
Step 1: WASHING; Soak your beans in water for about4 – 6 minutes and wash by rubbing the pods between your hands until the skin comes off. Alternatively a blender can give us the same result all you need to do is use the pulse button this method is quite easier and less stressful.
Step 2: Put the peeled beans in the pot on a high temperature, top up water from time to time, boil till it softens, pressure pot makes the work faster. When it is soft
Step 3: Sieve out the water if any to remove clumps and get a smooth consistency. Transfer into a bowl and mash up with Ijabe (Ewedu broom) or a whisk. Alternatively blend the cooked beans in a blender for smoothness, it is advisable to allow the beans to cool is using a blender.
Note: Often times, people add stew to their mashed beans alternatively palm oil and different proteins can be used to achieve a delicious gbegiri. I definitely prefer the latter probably served with buka stew.
Step 4: Place a cooking pan on a medium heat temperature and add palm oil, allow oil heat for about 1 – 3 minutes , don’t allow it to bleach stair pureed beans in palm oil and add water if need be to achieve a desired consistency, ensue it is creamy and smooth
Step 5: Add assorted meat, crayfish, dried pepper, Locust beans (Iru), seasoning cubes, salt to taste and stir briefly. Reduce the heat and allow to cook about 10 – 12 minutes. Cook until ingredients are well combined, Check from time to time to prevent it from burning. Taste and adjust seasoning and salt.
Serve well with Ewedu or any swallow of choice, (the likes of Amala dudu (black yam flour), (Tuwo corn flour) and buka stew.
